History of Brown Sugar
A sucrose sugar, brown sugar earned its simple title and distinct flavor thanks to the presence of sugar cane-derived molasses. There are two basic types of brown sugar: light and dark, with light typically containing 4.5% molasses per volume and dark containing 6.5%. It’s been in use for generations, and gained so much popularity that in the late 1800’s the white sugar industry launched a smear campaign that nearly took this culinary staple off the menu for good!
